Nobel Prize banquet 2023: the starter

Take a look at the craftmanship behind the starter at the 2023 Nobel Prize banquet. Chef Jacob Holmström values sustainability and always tries to use local produce. For this year’s starter he has combined flavours of golden beet, algae and Swedish caviar. To prepare for the banquet, Jacob and his team have crafted 21 000 flower petals from golden beet.
